Does Hygienic Design Increase Sanitation Efficacy?
Reducing the risk of food recall is priority for all food manufacturers. Sanitation procedures are being evaluated and improved. Improved hygienic design of machinery is considered one of the best ways of reducing risk by increasing sanitation efficacy. The Virginia Tech Department of Food Science and Technology in conjunction with Kollmorgen conducted a test comparing servo motors with standard designs to a servo motor purposely designed to be hygienic. We will review the findings of this study, discuss implications, and monetization of hygienic design.
